本标准规定了粮食、油料中脂肪酶活动度测定的术语和定义、原理、试剂和材料、仪器与用具、试样制备、分析步骤、结果计算及重复性。
本标准适用于粮食、油料中脂肪酶活动度的测定。
本标准与GB/T 5523-1985 相比主要变化如下：
———修改了标准名称；
———增加了术语和定义；
———修改了标准溶液浓度、缓冲溶液pH值及滴定指示剂等内容；
———增加了检测结果的重复性要求。
